Dawn Hilton-Williams, BA straddles the line between entrepreneur and activist.  She is the founder, head chef and proprietor of the catering business Herban Eats, LLC, for which she labels herself as the "Vegucator", due to her heartfelt mission that all she does will have an effect of educating clients and public about the health-promoting benefits of plant-based eating.  She is a longtime community activist seeking coordinated action against food deserts and access disparities, and seeking consciousness-raising about how affordable plant-based foods may also be tasty.

Dawn is the author of “Flava My Plate:  Your Tasty Vegan Guide to Health-Wealth".  As is the case with so many others in the plant-based "movement", she found a crossroads moment thrust upon her via tragic deaths and terrifying illnesses of her own family members, launching a journey of investigation of food's possibilities as preventive medicine.  Her earning a Certificate in Plant-based Nutrition from T. Colin Campbell Center for Nutrition Studies and eCornell was a key inspiration for her future work.  She said about it:  "Within the first 30 days, I  was fortifying myself with indisputable peer-reviewed evidence-based data, that, on its face, appeared revolutionary, but in reality, was just science I never knew."
